Santa has a list and he is checking it twice to see is naughty and nice. This year I have been nice at being naughty so Santa I will not being serving cookies. Instead Santa you will have a sweet cake waiting on you to come down the chimney. Chantal.jpg

This Holiday cake is the perfect combo of intoxicating sweet and nutty! Smooth but crunchy in all the right places. It is the perfect size, filling my mouth to its max with your chocolate richness. Oh yes! I love your dark cocoa color and sweet flavor. My bitter-sweet, forever chocolate; you heighten my senses, swelling the room with your heavenly aroma. Please let me eat you. Your sweet juiciness keep me wanting more and more until you are gone. Although, you can be a bit overwhelming (to the unprepared) but whenever you are done correctly – you get it right every time! Perfectly combining your  nature with a touch of  nutty sweetness … one taste and OH, my taste buds are doing a happy dance!” My own personal “Now & Later“- to savor every bite as if it was my last time. I want you right now…

Made from scratch and covered with toppings. Stick to your recipe as each cake is not the same. This recipe calls for EXTRA nuts! I love velvety chocolate caramel nuts. Cover the cake with everything you got. Who knows you may get an extra gift this Christmas.

Get It…!!!

No adlib, stick to my cooking time. Midway through baking rotate this cake 180 degrees. That is right, flip this cake around! Make sure the cake is baked evenly! Once your time is up and the cake has risen. Insert your wooden stick directly into the center of the warm cake and pull it out. If your stick does not come out clean- your cake is not ready. Put it back in quickly! If your stick comes out clean- your cake is done and you can remove it from the oven.

Today I want to connect with your soul. Ooouuu, you are so damn good!! I crave it all day. Anytime, anyplace; I CAN NOT sleep until I get some! No off brand will do, I am stuck on you like glue. I will skip dinner for a piece of you. I want it all! I will not stop until everyone has a chance to sample my cake. I want to slowly spread my cake across the world! Intimately expose yourself to me, show me what you are willing to do for this cake. How far will you go? My chocolate cake is the ideal mocha with a mouth bursting creamy glaze filling. My rich moist chocolate cake will have you ready to slap your momma.  I love creating new flavors and pushing the envelope! Summer has gone and fall is in the air. The cool crisp air, the leaves are changing color, and the nights are getting longer. Everything is changing, so is your taste for cake. Everyone has a fall flavor profile; rather it is pumpkin, caramel apples, sweet potato, etc. The intoxicating heavenly rich aromas of fall. How do you prepare your cake for the fall? Which is your fall cake flavor?

My cake flavor for the fall is caramel apple. It is the perfect combination of sweet, sour and richness. A juicy apple smothered with velvet caramel topped with a lot of crunchy nuts. Who would not want a big sweet juicy apple, will you savor ever bite?

So I found away to make my cake Caramel Apple flavored for the fall. My cake is so good it will make you devour every inch of my cake, be careful not to get too much caramel on your face.

Caramel Apple with Nuts

This cake could get stick and finger licking good. Lick up all this caramel leaving nothing behind. Show me how much you appreciate this cake. It was baked just for you! I love it when you get a little messy with this cake. A super moist apple flavor cake with hints of cinnamon, covered in a rick velvet caramel sauce and topped with nuts if you desire.

Get your fork, spoon or my favorite your finger ready; put it deep in to my cake and taste a mouth full of it. One slice of cake maybe okay for now, but that flavor will linger in your mouth, causing you to come back you more cake.  Bet you can not eat just one slice! You will be begging to taste a slice. The Chronicles of the Obscenest Baker: My I use your wood to steady my cake!

WARNING: “For the Grown and Cake Lovers Only”

Excuse me honey, but can I use your wood to hold my cake steady? It is cool, you do not need to know what to do. I got it or I can teach you all that you need to know. I need your wood straight down the center of this cake. Dowel the cake to keep it from caving in on its self and keep it sturdy.

First, you need to coat this cake with as much as buttercream as the cake can handle. Let it settle for at least 24 hours; to reduce the risk of your cake shifting. You do not want this cake to slide anywhere.

Level this cake please! Gently, lay it down on the board, so that it is level on all sides. We do not want any of that buttercream on the floor. Buttercream is best when you put it where it is made to go… on my cake! I want every damn drop. Cover this cake completely, leaving nothing uncovered.

The cake is ready to be probed with your wood. This must be done with the gentlest of hands and perfectly executed. You will have to fill this cake fill your wood several times depending on the size and shape of the cake.  This cake will need a wood per every 2 inches of cake. This is not no quick wooding, you’ll have to go several rounds to secure this cake! I hope you are up for the task. Use the upper tier as a guide to determine wood placement.

Can you level this cake and make is secure? Your wood should be the same height as the cake, insert it into the cake going down to the cake card, mark the height of your wood with a food safe pen, taking the wood out and cut it to size. Use that wood as a guide and cut the other dowels at the same height for that tier. Push the wood firmly into the cake, do not be scared. That is what the cake is made for. If you managed to get the cake leveled your wood will sit flush with the buttercream. If not, you will find one or two are slightly higher above the buttercream. This should not be a problem as long as you cut all of your wood to the same height. Repeat this as needed before assembling the cake.

Now, stack this cake and eat it! Use a cake drum for the base to support the weight of the top tier(s). This cake is going to be heavy so it needs a sturdy foundation. “Glue” the tiers to the board with some royal icing, by applying it to the base and place the base tier in the center of the board. Use those gently perfect hands to ensure the cake is centered, adjustments may be required. Stack this cake! Secure all the cakes together and make sure they will not slide off take a long thick wooden dowel (just a little bit shorter than the total cake height) sharpen one end of the wood and with a help of a hammer carefully drill it in all the layers of the cake until it reaches the cake drum. Cover the hole you just made with some icing or decorations. Allow the cake some recovery (rest) time for a few hours before decorating. You did just dowel the cake with your wood!

Here are some quick tips to remember:

  1. You cake should be properly dowelled individually.
  2.   Use icing as glue, between tiers to ensure they don’t move.
  3. Also make sure your cake is leveled.
  4. Your wood should ALL be the same height.
  5. Chill your cake, before stacking your buttercream cake. It is must easier to work with hard but soft icing.
These are only tips to help ease the task of dowelling your cake. It is always best to use more wood in your cake rather than less!!

As a child, her favorite tradition was hearing people sing “Happy Birthday” with the cake and candles. She did not care about presents.

Chantal has been baking for about 7 years. As a single mother she wanted to make a difference in her and her daughter’s lives. Chantal obtained 2 Computer Science degrees while taking care of her daughter. After graduating she was offered a position in her field of study. After many prayers, she took the step of faith and started Cakes By Chantal.

The Chronicles of the Obscenest Baker: Cut and Smash It!

WARNING: “For the Grown and Cake Lovers Only”

Every wedding night ends with the cutting of the cake. Although customs transform with the times,  and today the ceremonial cutting of the wedding cake has remained a popular and meaningful wedding reception activity. Numerous of couples include the cake cutting during their reception.  It is a fabulous way to capture a symbolic photo of the couple’s first joint task as newlyweds. Find out below how to properly cut the cake on your “BIG” day.

This is how we cut it…

Even if you believe you are a pro at cutting cakes— birthday parties or entertaining—check with your cake baker or caterer for special instructions to cutting your cake. Please avoid placing the knife in the wrong spot.  Most tiered cakes have dowels in them for support. You could cause the delicate tower to topple over and your beautiful cake will become a crumble mess; if you cut the cake improperly. I recommend you cut this cake from the bottom. This might sound obvious, but remember to use the cake knife, not the server, for the quickest and cleanest cut.

Smash it…

Open wide and prepare for the first bite; newlyweds frequently feed each other the first slice. Every now and again instead of getting cake in your mouth the cake is smashed into your face. You may feed each other cake; however, you want, but keep in mind—you do not have to smudge frosting on your new spouse merely because your guests anticipate it. You just spent money to get your hair and makeup plus you are probably both in expensive outfits—don’t risk any staining if you don’t want to. Either way, ask your baker or caterer to have napkins (or even a warm, damp cloth) close by to wipe up any rogue crumbs or frosting quickly.

Numerous of couples freeze their top layer; however, now-a-days couples are choosing to do away with this tradition. Talk this over with your baker!

 

Cake the Crowd

Once the cake has been cut, the catering staff will take the cake into the kitchen to slice for the rest for your guests. If you are cutting the cake yourself, please refer to Chantal’s Cake Cutting Tips above.  Numerous of couples froze their top layer; however, now-a-days couples are choosing to do away with this tradition. Be sure to talk this over with your baker!
